Howdy!  So maybe this makes me look really dumb but I'll ask it anyway - what kind of bran should I be using for dusting prior to proofing the bread, and where can I buy it?

I bake fairly often from Lahey's My Bread and have been using either corn meal or flour for dusting the towel, but would like to try bran.  Tonight I'm baking Leader's WW Genzano which is supposed to be heavily dusted with bran.  Thanks!

I just used oat bran to line the bottom of my basket and it give a nice rustic look and extra texture to the bread.

I use wheat germ for genzano.  It works well.

On my third try I found a supermarket with three kinds of wheat bran, so I'll go with that, thanks.

@Occidental - do you do all the high speed kneading that Leader calls for, or do you prefer some other method with less kneading and S&Fs or something?
