Charcoal grill bread

We are planning a short camping trip and I wanted to see if I would be able to bake a reasonable loaf of bread when we go.  I baked this is on a small Cobb charcoal grill.  I used coconut briquettes, which didn't impart any charcoal flavor to the bread.

I was very pleased with how it turned out, and will be trying some other bread recipes.  The crust had just the right amount of crispness and the crumb was just fine.

I used a recipe from the back of an old Better for Bread bad.  Rose's hearth bread. 

I tried to attach a photo of it sliced but I guess I only know how to do on photo at a time.  terry

Did you bake the bread inside something, like a Dutch oven?  or in the wide open?

Was it on a stone? Please expand more on your grill set up.

Although, upon web searching this Cobb grill, I may be getting a better idea of the set up already. So I suspect no stone was used.

Looks like a pretty "cool" gadget. Cook(bake,etc) at 450ºF for up to 2 hours with only 8-10 charcoal briquettes.

I did not have a stone but I am going to look for one that will fit the small size of the grill rack.  I used 12 pieces of Charcos, 100% coconut charcoal. 

Since I did not have a stone, I just set the dough in a cheap aluminum pie pan, because it would just fit. 

I had lit the coals, let them get hot, put on the deflector plate and then the rack, and finally the lid.  When the lid felt really hot, about 20 min. from lighting the coals, I lifted it quickly and put the pie pan of risen dough on the rack and put the lid back on.

I did not peek for 25 min., though it was hard.  At 25 min. I checked the progress, and could see it was baking more on one side than the other, so I just rotated the pan and put the lid back on to continue baking.  I think it took about 45 min. total to finish baking.

When I took it off the grill, I was afraid the bottom would be burned because of the heat being concentrated in the center bottom.  It was the same golden color as the top.

I have baked bread in a Dutch oven before, but  this was far easier.  http://www.cobbq.com/

I am in awe of your bread. I had never seen one of these before . What a great idea ! We do so much camping and now I can see so many uses for this. Thanks for posting...wish it weren't so expensive...but what an great piece of equipment. c

trailrunner, I got mine as a woot deal.  If you watch you can also get coupons.  When I got mine, it was on Woot, with a 50% off accessories coupon.  I got the entire set of them and they each have their use.  They are very well made and all fit neatly into a small carry bag.   terry
