I recently joined your website, and it's great. My mother taught me to bake bread, and my grandma taught me how to make bagels, and I still love the feel of bread dough!! I don't usually measure ingredients; I just go by feel, and that gives good success most of the time, but also gives a few bombs!! I just ordered a kitchen scale, so I'm going to start measuring things. And I'm going to try the slap and fold method of kneading.
BTW, Cooks Illustrated is a great cooking magazine, and they often have good bread and pizza recipes. I like that they explain the scientific reason behind techniques and ingredients.
