Cranberry-Orange Walnut Bread

Fresh cranberries are plentiful this time of year.

I love this quick bread with cream cheese for breakfast.

Cranberry-Orange Walnut Bread Makes 2 large loaves or 6 small loaves or 18 muffins 4 cups all-purpose unbleached flour 2 cups sugar 3 teaspoons baking powder 2 teaspoons salt 1 teaspoon baking soda 1 1/2 cup orange juice 4 tablespoons butter or shortening 2 tablespoons grated orange peel 2 eggs, beaten 3 cups (1 12 ounce package) fresh cranberries 1 cup chopped walnuts or pecans

Preheat the oven to 350 degrees. Combine the dry ingredients then stir in the wet ingredients. Stir in the cranberries and walnuts and pour into greased bread pans.

Large loaves need 50-55 minutes to bake, small loaves 30-35 minutes. A toothpick inserted into the center should come out clean when they are done.

Remove from the oven and allow to cool for at least 10 minutes before trying to remove the loaves from the pans.

oooo. that looks and sounds really yummy. I'll have to see what it comes out to in weightwatchers points. maybe I can tweak something.

The only thing I need to tweek here are the time and incline settings

on my treadmill!!!

Just kidding of course....I have really watch it too.

Fresh cranberries are something that I really miss living in London. I'd love to make this recipe this weekend (no Thanksgiving either) but I can't. Dried would not do the trick.

If anyone is coming to the UK, I'll pay very well for some smuggled fresh cranberries.

at least the bread rush!! I made 16 loaves of your wonderful cran-orange bread and 12 loaves of sourdough for gifts. I started with a cran-orange I thought was great, until I tried yours. All has been shared with co-workers. A couple loaves of sourdough were confiscated by my 16 y/o stepson (Ryan) to take home, and cran-orange by my husband. We also have a great fruitcake that has been sprayed for the last 3 weeks with apple brandy. This one was made with blueberries, cherries, apricots, candied ginger, golden raisins and currants.

We are now working on the sweets..so far peanut butter fudge and gingerbread popcorn. I felt awesome, hearing Ry telling his best bud, ahhh..you have to try some gingerbread popcorn, while they are playing "Guitar Hero"..she is an awesome cook. I am now in HEAVEN.

We are making pecan snowballs, chocolate/roca pretzels..and whatever we have time for..

I made this recipe to send out to family and friends; it makes so much that we were able to get 6 extra cupcakes out of it. It is absolutely delicious...I heartily recommend juicing the oranges that you grate the rind from and adding the pulp to the mix.
