Soak cracked wheat?
I have been making a wholewheat bread with a slightly modified recipe that came with my mixer. I want to put some cracked wheat in it, but cannot find out whether I need to soak it or not, or whether I need to change anything else to compensate.
The recipe I am using is this:
2 1/2 cups organic whole wheat flour
1 1/2 cups organic all purpose flour
2 tsp salt
1 tsp bread improver
2 tblsp olive oil
20g fresh yeast
1/4 cup flax seeds
1 2/3 cups (400ml) water
