Simple Dessert...

My grandmother used to make this back when I was a wee little runt.  She called it Peek-a-boo.  So thats what I call it.  It has a very simple list of ingredients and the kids love it (and so do I).

This is a Cherry Peek-a-boo

The ingredient list-

2 Sticks butter  = 226.8 Grams = 8oz.

2 Cups Sugar   = 426 Grams    = 15oz.

3 Eggs

1 Teaspoon Vanilla Extract

3 Cups Flour    = 492 Grams    = 17.3oz.

And then 2 cans of your favorite pie filling

20-21oz. Cans  = 567-595 Gram Cans

Directions are just as easy.

1) Cream butter, sugar, eggs, and vanilla.

2) Mix in flour until all incorperated

3) Spread 2/3 of dough into a 12x18" greased cookie sheet

Spread both cans of pie filling across top of dough.  Then take remaining dough from bowl and flatten little pieces across top of filling.

Bake at 375' F. for 30 minutes (tops should be lightly browned)

Final product is kind of like brownie consistency. The Peek-a-boo is named from the fruit kinda peeking through the dough on top.

Not very fancy, but goes good with vanilla icecream or as a stand alone dessert.

Blueberry and Cherry Pieces

Total prep time - 10 minutes and thats doing everything by hand (Remember, I dont use a mixer for anything)

Bake time- 30 minutes

Cool time- 10 minutes

Time for kids to realize its done- 5 minutes before it even comes out of the oven... ;)

I used to make this all the time and had lost the recipe. I used 13x9 pyrex and for the topping, just dropped it by teaspoonfuls. You don't have to flatten it, they'll spread on their own while baking. Thanks TT!!

Paddyscake, what do you remember it being called?  My grandmother passed some years ago, but I was able to get the recipe from some relatives and we just went with what she called it.  I think I'll try it sometime in a smaller container as well.

TatooedTonka, my son needs a dessert for an event tonight--guess what his mom's gonna make? By rights I ought to have him do it...you with your girls changing oil and all... I actually got him to do a couple stretch-n-folds for me a while back when I had to leave, which was a one hundred percent expansion of his culinary skills.

This seems similar to a cobbler, which is made with a biscuit crust and the 'cobbles' only on top.

I'll probably end up making two so we can keep one at home--otherwise I won't even get a taste.

As you can see from mine, they are kinda thin.  Now Paddyscake had a good idea.  She said she made it in a 13x9 container.  I used a 12x18" pan.  After thinking about it a bit.  I think I should go to a smaller pan to get a thicker product.  And using a smaller container I could probly get away with using just one can of filling instead of 2. Let me know how yours turns out please. Thanks

Here it is, TT.

I took yours and Paddyscake's advice to use a 9x13 pan, and as a result one can of filling was plenty. It really is as simple and delicious as it looks. I think sometime I'll try it with the bigger pan and extra filling, too. It was a hit with the kids. Since this was sprung on me last minute, this super-quick dessert was just the ticket. Im glad it worked out for you. Isnt it super easy to make?  I love the flavor as well.  Now granted, its no fancy Stollen.  But for a simpler fella like myself, it hits the spot.

Sorry I didn't get back to you TT! We just called it Cherry Squares..not too exciting..I like Peek-A-Boo better! I hadn't noticed that yours took 2 cans of pie filling. The thickness of the crust in the 13x9 makes it a little more like a cake, rather than a bar.

I am going to try a Strawberry one this weekend, and I'll go with the 13x9 and 1 can of filling.  I would like it a little thicker too.

Have you ever made dump cake? If you're really in a hurry and need a great dessert..

  • 1 can of cherry pie filling
  • 1 can crushed pineapple with juice
  • 1 yellow or white cake mix
  • 1 1/2 cups of butter, cut in pats on top
  • 1 cup of chopped nuts

Spread the cherry & pineapple in a 13 x9, sprinkle the cake mix over (do not mix), top with butter (I've used less) and sprinkle the nuts on top. Bake @ 350 for an hour.

Really, it's very good for thrown together! Merry Christmas to you and yours!

Sounds easy enough..

I wont use less butter though ( I loooovvveee butter).  Like it doesnt show in my pic's.
