the hotdog pan?  I was looking at it also but since the sides touch, how would you serve a hotdog with chili for instance, wouldn't this seep through the bottom ?  I am still looking for an idea, but freestyle does work, albeit not in consistent size which is very important you know, being German and all, grin grin

I like the pan a lot.  It's a New England style hot dog bun pan so they are meant to touch each other and then you split them down the middle.  It is a good investment and worth getting so you get more consistent results than free forming.

I made about 30 rolls for the 4th of July and they seemed to be a big hit.

I wasnt sure how you split them, I thought they would be split on the doughy side, leaving the bottom doughy side to be drenched by all the goodies.  Since you are already an expert, would you mind sharing a recipe. I am getting to the point where, with 12 books, and 1000s of online recipes, my calcifiying brain is losing direction :)  

My regular white bread recipe didnt taste much like a hot dog bun, the focaccia dough was a bit too springy, there has to be a good middle one.

Hi Anna,

I used the recipe from here http://www.thefreshloaf.com/node/23438/new-england-style-hot-dog-buns

I substituted potatoe flour for the starch and left out the dry milk.  I added some dried minced onions and reconstituted them in the milk and added some cheese powder just to make it interesting.

I hope you give them a try.  One note, instead of rolling the rolls out individually you can stretch the dough into a rectangle and place it inside the pan and cover with a weighted cookie sheet that has been oiled.  I tried this once but I messed up the ingredients and it didn't turn out very well.

looks quite yummy especially with the hint of onions and cheese, so perfect to complement a good dog!
