Not the Naan

Today for our 3 pm dinner of Pork Kabob's, excuse me, that's Pork Kabab's with a Cucumber, Yogurt Sauce.  Inspired by a Saveur magazine recipe.   I wanted a nice easy Naan/Pita bread on the thickish side to enjoy with the PK's.  This was a first for me making a Naan and, I quickly settled on a recipe I found surfing around.  I changed the whole wheat flour addition to an organic white whole wheat, I had been wanting to use up.  I added quite a bit more AP flour.    

After dinner I looked more into the orginale recipe.  I also found that there had been a discussion on tfl and the recipe was changed or maybe it wasn't, I still can't figure it out.  Anyway, it just opened up a whole can of worms 'lol' and I decided not to go there with a recipe.  

I should have done my math first and saved myself the grief.  I was just having to much fun mixing up my wine marinade for the kababs and that wonderful greek yogurt sauce I love so much.  So no post for the recipe.

I would love to see some of tfloafers favorite Naan/Pita's recipes..on the thickish side.  I also like to bake them in an iron skillet for a little extra crunch and char taste.

Dinner at 3pm  or is that Supper...no I'm pretty sure it's Dinner time!

 

 

Rotisserie Pork Kababs

 

The Naan was delicious and went perfect with dinner.  The texture and thickness was just right and the touch of honey was a plus.  I ate the first one off the grill, just meaning to have one bite.

Would love to see some bread made in that ans see how you figure out to steam it :-)  I gain 10 pounds every time we eat Indian just from the naan,.  One of the great breads of the world. They are like potato chips with dip...I makw them a skillet too but they aren't as nice as yours.

Thank you DA! I think french toast might be good : )  I'm in love with my Cuisinart Rotisserie.  A super easy breeze to clean and the food is great too.

I bet you make a great naan and dip!

Wow Sylvia those breads look great ! Can you send me the link to the recipe you used ?  I am not sure I "get" what the can of worms is about LOL..don't eat worms with bread or yogurt sauce..I like mine plain :)  Your naan look better than any I have tried to make. I have a regular roti in my oven but yours looks SO easy !  I will have to do a search. I don't think I have ever seen anyone else post pics of theirs. Always enjoy your posts. Are you getting out much on your bike ?  c

This is still a work in progress.  Not really a Naan.  It's a pita bread.  There is no yogurt or milk in these.   I can't wait to try the greek yogurt addition.  I think the iron pan really helps achieve the color and texture I like.  I just used a basic pita bread recipe and adjusted the hydration because I used up some left over organic white whole wheat flour mixed with AP.  The recipe I used had a mistake on the hydration.  I used honey for a little sweetness and liked it very much, Olive Oil, sea salt, IDY.  I pre-heated my well seasoned iron skillet on low while shaping the pita's and rolling them a little on the thicker side.   I turned up the pan to about a medium/med. high to cook the breads.

Mike's the bike cyclist in this family...mines in the garage with a flat.  I dreamed I was riding an electric bike last night : )

Since you asked for our recipes and all. Sometimes, when I have lots of time, I'll make paneer (Indian cheese) and use the whey to make naan. Also, buttermilk can be used instead of yogurt. I want to try to make Amritsari Aloo Kulchas someday, which is naan dough but stuffed with a spicy mashed potato mixture.

sounds like a wonderful addition.  Next time I make some yogurt, I'll add the whey to the Naan.  Buttermilk sounds wonderful too.  Potatoes are one of my favorite things...I just have to watch out for to many carbs.

OK....I thought you and your daughter were biking on one of your trips...hm...my mind is going I guess !  Oh well go pump up that tire and get out there !! It is so fun :)  I thought they looked like pita bread...so I will give it a go. I have lots and lots of whey since I have really been on a kefir cheese kick. I used a bunch of my kefir cheese last night to stuff enchiladas. It was so yum..just added salt and pepper and a bunch of chopped fresh cilantro...spread it on corn tortillas that I had browned over an open flame...rolled them and covered over and under with good stuff. Will post back when I get the breads made. Thank you ! c

Oh yeah, that's up in Aspen..I have an electric assist bike there...'lol'..so I can keep up.

Sounds like your ready for Cino De Mayo.
