Almond and Orange Florentines with Lavender sugar

little treats for me and my friends..

ALMOND & ORANGE FLORENTINES WITH LAVENDER SUGAR

INGREDIENTS
Vegetable oil for greasing the tray
2 egg whites
50gm caster sugar blend in a food processor with one tablespoons of lavender tea flower
200gm flaked almonds
Grated zest of 1 orange

METHOD
1. Preheat the oven the 150°C and line an oven tray with baking paper and brush it lightly with oil.
2. Put the egg whites, icing sugar, flaked almonds and orange zest in a bowl and combine gently.
3. With damp hands pick up portions of the mix (about a heaped tablespoon) and place them on the tray in little mounds. Make sure they are spaced well apart as they do spread during cooking.
4. Dip a fork in water and gently flatten each florentine very thinly…as thinly as you can muster without leaving gaps between the almonds. Aim for a finished diameter of 8cm.
5. Bake until golden for around 12 minutes. I’d suggest setting your timer for these ones as they can burn very quickly if left too long.
6. Allow the biscuits to cool on the tray then gently lift them from the baking sheet using a palette knife.

beauties aren't Lumpurians?  Odd how those influenced by the Brits call a cookie... a biscuit or a digestive :-)  Another exmple of how we separate ourselves by a common languiage.

Oddly, the spell checker says to replace Lumpurians with Lamebrains - talk about lamebrain....

and I happen to have a lot of egg whites from making cookies at Christmas. They have been frozen waiting for just such as your recipe. Great pics. c

Evon these look great.  I am not much of a sweets guy (that is a total lie) but I LOVE toasted almonds so I would go crazy for these.  We have tons of lavender around here in the summer months and I am always thinking how to take advantage of it other than drying and using for potpourri or bath scents (ahem...I AM confortable with my heterosexuality)...making lavender sugar is a new idea!  Thanks for that!

hi John, you can also use those lavender scented sugar in all your bakings. never seen a lavender bush .. would love to see those beautiful purple lavender from your place. could you take some pictures? are those english lavender or french?

Evon.  They don't bloom for another few months however, here is a video of a local lavender farm here in Langley, BC.

This should give you a good idea of what we have here.  I believe they are English Lavender, not French.  I am actually surprised we have levender farms here.  We them all over the place, one can just walk down a street and pick enough to last a few years.
