What mixer for using Peter Reinhart's artisan breads every day

So I'm looking at getting a new and larger mixer, but I couldn't find out any information about this.  I mosting bake using Peter Reinhart's recipes.  Artisan breads everyday and Bread Bakers Apprentice.  I have a 300w Kitchen Aid, which is going to die on me anytime.  I can smell the motor buring.  I'm thinking of the Bosch or Magic Mill, but I'm worried that I wont be able to use these recipes in this type of mixer.  I'm not sure.  Does anyone have any thoughts?  Is it a different process?

I don't want to invest in one, when I should have maybe just got the KA pro series.  But I've heard such bad things about them in regards to bread baking.

I also usually double a batch of whatever I am making whenever possible or if my mixer can hold it.  Right now I can only get about 6 - 7 cups in without it really going crazy on me.

Yeah, the MagicMill DLX is pricy but seems to be the one folks universally rave about.  There are lots of posts from happy owners here, and you can also check out the nice mixer throwdown on Sourdough Home.

Thanks for the info!  I know there is so much info about the mixers on here.  But with these recipes specific recipes/process, I wasn't sure if they would mix it properly or if it would be different all together.

I bought a KA when I first started baking a couple of years ago.  It got returned in less than a month when I purchased a Bosch.  I used the Bosch for about a year but replaced it with a DLX because I didn't like the way it couldn't handle small amounts of dough or wet doughs.  It was pretty temperamental on what kind and amount of dough it liked to work with and all I was using it for was bread.

Somehow I learned about the DLX and after a lot of research I bit the bullet and purchased one from Pleasant Hill Grain.  I have loved it since day one.  I have used it daily now for almost 2 years and it handles anything I toss into it.  I love how it looks on my counter too which is important because it is too heavy to store in a cupboard and lift every time I need to use it.  It is a snap to clean.  Controls are manual and consist of 2 dials only.  It has a timer and variable speeds that I can control. 

One draw back is that there is only one shop in the US that does warranty work and it is located in New Jersey.  If mine ever breaks it will cost a bit to send it in for repairs so I bank on it not breaking.

Thanks so much!  I bit the bullet and purchased the Ankarsrum Original (Formerly Electrolux/Magic Mill/Verona).  I purchased from Pleasant Hill Grain as well!   I can't wait to get it and try it out.  Thanks for all the info.  I really liked the video on Sourdough too!  Thanks everyone! :)

Always fun to get some thing new to help with breads :-)

If you have any questions about use feel free to ask me.  Took me a bit to learn how to best use it with the doughs I work with....The usual learning curve with anything new.

I know you will be pleased expecially when you see how well it is made.

So how many attachments do you have with your KA that you won't be able to use with a different machine?  Factor that into your cost analysis, if you have attachments.  If not, it won't be as much of an issue.

I just wanted to make mention of some KA issues based on my experience.  Although they've probably been discussed before, I feel it's worth mentioning on this thread.

Most, if not all, of the models below the wattage of the Professional 600 Series use some plastic components in the gear housing (internal parts),  while the higher wattage models are all metal.  All metal is what you need/want in order to accommodate frequent dough making.

I think the lower wattage KA's seem to have the most problems disappointing their owners.  That's not saying there haven't been issues on the higher wattage ones from time to time.  For example; I have an early Pro 600 (575 watt/ 6 qt) that had a plastic gear housing (the gears are still metal) initially installed and had a reliability problem.  KA has since replaced the plastic housing with a cast metal one on newer machines (which should have been installed in the first place) and the complaints on the newer units seem to be less.  KA handled this issue very poorly with out-of-warranty customers and put a black mark on them with a lot of customers.  Although my housing didn't break or crack, I could hear an increased whining sound that was the indicator of the problem in early stages of manifesting itself.  I caught it before there was gear damage.  Although I was a bit angry with the way they handled this known  issue, I researched the replacement part and installed the improved part myself.  This issue alone could have soured me on KA, but it really hasn't.  I bought the Pro 600 primarily to be able to make dough and that's been much of it's life and frankly, it has done it pretty well.

I know this sounds like a "pro" KA response, and maybe in a way it is since I have no desire to change at this time.  The issue to me is more of education on KA machines.  Because all the models look similar, knowing what the true capability of the different models they offer are is going to be directly related to your satisfaction.  For example, if dough making is your primary usage, you are going to be disappointed with the performance/longevity of an Artisan model (325 watt) unit eventually.  

With reference to KA being "China" made, the KA stand mixers are assembled in the US, component parts could come from anywhere, including China (just like the auto industry).  

My goal is to just make sure people know there is a difference in machines that should be considered before purchasing one.  I'm sure there's better products on the market that you would be very satisfied with and you should research any/all of them.  Ultimately you are the one that has to be satisfied.  When spending the kind of money you are considering, it's absolutely worth doing the diligence that you've started here.

Thanks so much for the additional thoughts!  I didn't have any additional attachements so that wasn't an issue.  Good info on the KA.  I'm just thinking that with what I'm thinking of using it for, I was pretty sure the Bosch was not what I was looking for.  So I was between the KA and the DLX.  Thanks again!
