I enjoyed the Q&A, though I was tempted to send him this photo to refute his statement that "you can't get a window in anything but white flour." I had a prettier one the other day, but didn't take a picture. I think this one could have been teased out more, but I was in a hurry. This dough is only 40% whole wheat, but I've seen them in 100% WW too.
