newbie- Puerto Rico -questions

 I recently moved to Puereto Rico from upstate NY. I love it here but do not like their bread. Ive made bread in the past but am new to the " no knead method". Ive made several loaves and so far so good. I have a few questions. Cover on or cover off?? Do I use steam with cover on or off?  I preheat my oven-do I need to preheat the pot. I have a hugh cast iron DO and I have problems handling it when its hot? Last question, I live in the land of aluminum DO pots, can I use them?? Would I have to change time and temp while cooking??

Cover on for 15-20 minutes, then cover off for remaining 15-30 minutes.

If you use cover on for 15-20 minutes, you don't need additional steam. 

It doesn't make a lot of difference whether you preheat the pot or not. I prefer not to preheat for safety's sake (I've tried it both ways and I don't see a big difference).  

You can absolutely use an aluminum D.O. to do the same thing. Likely no adjustments necessary.
