Sinclair's Bakery

Latest Update!
Next Tuesday I pick up my completed concession trailer and get busy!  I can't wait.  That means that in exactly two weeks (March 2, 2013) I'll be making the Sinclair's Bakery debut at the Bozeman Winter Farmers' Market!  I won't be bringing the trailer since it's an indoor venue, but instead will be baking in the trailer here at my place, then transporting the breads and pastries to Bozeman, just like a regular market.

Here's a couple pictures of the work in progress.  Here's a Facebook link for more photos and a flickr link in case you don't do Facebook (same photos).

I'll post more photos next week when I get the trailer, and then some more when I get the graphics on the trailer.

edit:  At the bottom is a photo of the trailer that I picked up yesterday,  2/19/13.  There are more photos at the links above.

That is spectacular.  What are you using to fuel the oven, fridge, etc?

...you can see the compartment for the generator, just to the left of the wheels.  Two of the ovens run on propane, and one is an electric oven.

Mark, looks like you are almost ready to go into action.  I look forward to reading about your success in the near future.  I'm sure you will have customers waiting in line for your great baked goods in no time.

Good luck!

...and the first thing I will be making for myself is a a bunch of baguettes.  I haven't had any in 3 months and I am going through some severe withdrawls.

And shiny.  No wasted space.   That's very well designed, Mark.

No doubt you're itching to get rid of that new concession trailer smell and replace it the wonderful aromas of freshly baked yummies.

Checked out your photos.  A loaf of good bread, a bottle of good wine, good cheese, and great skiing = Nirvana.

Have a great debut at the market!

Yes, it will be nice to be completely immersed in the fresh baked smell again.  I can't wait.

I guess you're going to have to send them my way then, aren't you?  Although I'm much further from Glacier Park than I was before, I'm very close to Yellowstone, so there's always great scenery around here too.  Take care.

That is one heck of a gorgeous 'kitchen' !!!!  Amazing.  I am anxious to read how it all works out knowing there is always a learning curve when breaking in new equipment.  Should be a blast.

Take Care,

Janet

Yes, it will be interesting to work in it for the first time.  The ovens, proofer, and refrigeration are from The Back Home, but of course the work space is completely different.  I'm looking forward to it.

Once everything is in place and I have the system figured out, I'll make a video so people can see what the place looks like in action!

The picture looks much better then your drawing.  Efficient taken to the max. I can see now you will have some room to load the ovens.  Nice job.

Most impressive and looking forward to your reports on your first bakes.

Some things changed around a little bit from the drawing for the sake of weight balance and efficiency in the trailer.  It will look even nicer with the work benches in the back!  Of course I also can't wait for the first bakes in the new place.

Thanks for the well wishes.  Yes, I think the trailer is looking very nice also.  Once I get it here, there will be a few final touches to make, then it will be ready to go.

I KNOW your well-planned and researched new venture will be a hit! I'm so happy you'll have your hands back in dough (and butter) soon and know that Bozeman will embrace your goodies! It's also great to see the outpouring of support from both the FB and TFL communities.

Enjoy your new venture!

Well, I just made 150# of laminated dough in preparation for the arrival of the trailer, so I've already got my hands in the butter!  Pretty soon I'll be eating baguettes every day for breakfast and making this place smell like a real bakery.  Thanks for the support!

Congratulations, Mark!  You look successful to me already.

[<ONLY WHISPERING...> Do you have/need a special drivers' license for a bakery? That's a beautiful, big trailer.]

Wishing you the very best with this endeavor.
