Another Batch of kjknits English Muffins – 12.5 % Whole Wheat

We love these English muffins and try to make them a little bit different each time we make them.  This time we used some of the left over SD levain for the panettone.  We made them the thickness that is called for in the recipe at 3/4” for the first time.  Normally we make them thinner since the puff so much. 

 

This is a levain, flour and milk on the counter overnight then sugar, salt and baking soda in the morning is added, 4 minutes of kneading and then shaping, I used a plastic drinking glass, followed by a 45 minute proof and then dry fried.  Ian used an electric skillet for his earlier this week.  After not even being thought about for decades, I saw our electric skillet in the garage the other day and it seems time to put it some good use for a change.

  

This batch came out the best yet but will make them ½” next time.  The EM’s made a great sandwich for breakfast this morning toasted, with butter, marmalade, sausage and egg on top.  Yummy!

 

If you haven’t made these yet, put then on the list - they are just too good to pass up and one of the few recipes we make over and over again – like bagels.

for not being used in over 20 years, worked out perfect.  We renamed it the English muffin maker to go along with the single use appliance trend. No spray of oil though.   Isn't this one of the all time best recipes?  Wonder what happened to kjknits?

Glad it worked out for you.  I have way too many of those 1 time use appliances myself.  I have to get rid of a big toaster/broiler that I never use.  Just don't have enough space in my house.  I have an entire room in my modest size house devoted to cooking and baking supplies and canned goods, flour etc.

Yes, this recipe is great.  You have to try the greek yogurt adaption I used if you haven't yet.  You will not be disapointed.

You will love the bread I just took out of the oven.

I will post later tonight.  I'm supposed to be working right now as it is :).

Those English Muffins look perfect and paired with eggs and sausage patties - YUM!  Breakfast was good at your house!  I like how you got the muffins so nice and brown, way better than Thomas's

the ingredient list on Thomas's EM's:-)  This one has non fat milk, wheat flour, SD (water and wheat), sugar salt, and baking powder.  They are like Wolferman's EM's if you have had those.  We do eat well around these parts when ever we can!  This is one of the best and easiest recipes on TFL  and perfect for using up left over starters. They freeze great too.

I make them all the time, great with burgers or anything else.  I like your use of the electric skillet.  I use cast iron now and it does not brown them even.  I just realized the freezer stash is gone so I will be making more this weekend.

isand66, what is the "Greek yogurt adaption"?

I bought a new (toy) winter project that will work great with the EM's I just started the tear down today I will post about it later with some pictures that could make your stomach turn and make you never want to eat out again. :-)

dabrownman, Do you cook them all the way in that skillet?  I do mine part way on the cast iron then finish them in the oven other wise they get to dark.

See my post from earlier this week.  I give my adaptation using Yeast Water but you can sub SD easily.

i cook them completely in the skillet with the lid on to create some steam.  Works perfectly.

skillet but no more.  350 F setting, no muss no fuss, 5 minutes exactly each side and then they are done perfectly - if you roll them out 3/4" thick.  You have more baking toys than any baker should have faith :-)  So industrious!  Can't wait to see this project.

Mantana!  So much better than the store bought ones.  Hope all goes well with your cooking classes, other food activities and that the state of Virginia is leaving you alone.

We got in a very nice crop of green Thai eggplants at the Chinese markets.  Have been cooking iup a storm with them - so much better than Indian, English and Chinese purple variety.  Sadly, they cost twice as much too! I'm going to grow some if I can find the seeds.
