Hello from  a long time lurker in Wales....... Have been bitten by the sourdough bug.

All my efforts thus far taste great and the crumb is even and well developed, but i'm missing the spring and those "ears" which i crave.

Welcome to TFL.  I live in east Shropshire and work (sometimes) in Oswestry. 

It is good that you like the flavour of your bread.  However,  to stand any chance of the helpful folks advising you you will need to post details of your recipe and method, as well as information about your starter such as feeding regime, hydration, at what point in its cycle you use it etc.

Welcome! You won't be disappointed by the quality of expertise and advice on this forum. Start a new thread with some pictures and more info of the problem you want help addressing and I'm sure we'll be able to help out!

Thanks for the welcome. I've fixed my problems by using a cast iron 'dutch oven' ( really a large le creuset pot). The rise and ears are now fantastic! 

If i can work out the pic uploading, i'll post some snaps

what a good dose of Dutch oven will do for a loaf of bread - just beautiful.
