Looking for bread baking classes

I live in central Virginia and have an interest in finding bread baking classes. I guess the pros want to maintain trade secrets, thus why it is such a challenge to find. Wood fired oven baking is of particular interest. Thank you for any direction.

King Arthur Flour has wonderful classes in what your looking for. Its a drive from VA but worth it. Was just there 2 months ago for a class and dont regret the money spent

It's a "horse of another color" kind of school.Founded in 1925 it survived the Depression, WWII and other, more local, crises and is going strong now. I recently took a charcuterie course--we reduced a whole pig to deliciousness in many forms in one week--and found the overall experience invigorating; not just the class, which was fabulous, but extra-curicular hours also. The school's cooking and baking facility includes a well equipped classroom, and two WFO's, one inside, another outside.

Go on-line, to https://www.folkschool.org/ and take a look. I took a quick look; there's at least three weeklong courses in 2013 dealing with bread-making, including one taught by Emily Buehler, author of bread science.

On the site's home page scroll to the lower right-hand corner, and click on "Find a Class". When that page opens, click on the first category "See All 47 Subjects". A pop-up will appear. Click on "Cooking" and then "Apply".  I know, I know programmers love to make thing a puzzle.

It may not have what you're looking for, but it's not far from VA, and it is definately worth a look.

I took an artisan home baking course at King Arthur three years ago, and benefitted from it. I also, however have posted a possible alternative above.

You may want to check out http://www.craftsy.com/class/artisan-bread-making/104 if interested in video lessons with Peter Reinhart.

I have taken the first of about 8 sessions..each lesson is about 35 - 40 minutes long.  I think I paid $29 for the full course of lessons...check it out!

Good luck to you..

Hello Diamond Heart:

I too run into the same problem as you in trying to learn how to make breads! No one teaches here unless you can travel and pay big money. VA Western college has bread making classes but you must register and taking their two years culinary arts program inorder to do it.  Anyway, I learn how to make breads using this web site and just doing it again and again until I can do it. I live in Central VA. near Roanoke and am teaching people how to make breads. What do you want to learn and how advance are you in bread making?

I will be teaching Thai cooking at a College in Lynchburg in 2013 and perhaps, if there are interest, I could talk the Culinary Arts dept. into  bread making classes? Please let me know.

I am a newby at home bread baking. I have just started with artisan bread at acceptable results and really enjoy this craft. I am certainly open to options and appreciate your consideration. I would travel for a multi day class. Being in Va. would be that much more ideal. I know King Arthur and others are reputable but there must be others. I am interrested in wood fired ovens but one thing at a time. A foundation and practice are more important. I am in Charlottesville so we are not too far of a diatance. Thanks again.

I am in northern VA and looked into classes and was interested in the ones listed.  I had thought for sure Charlottesville would have some.  Of course I didn't find any.  Here's to the VA bakers:)

I'm no expert but would be willing to share what I know.  If you want to visit SW Virginia my WFO and kitchen is always open. Let me know and we could do some baking together.   Nothing fancy but the price is right.

Good Evening Faith in Virginia:

I am sending you a message since I too want to learn how to make bread( I saw your picture of croissant and know that you are better at bread making than I).  Floyd is not far away from my home  and I would like to see your wood fire oven too.
