I used to live in NC myself! This is an AMAZING place to be whether starting or trying to do something different! You will LOVE it!!

I have just replied to a new note from another newbie. Use the search function to find it using "wide eyed" and "richkaime". Some of what I wrote applies to you, especially about bread text books (as opposed to bread cook books.)
