"premium instant yeast blended with dough improvers"?  Uh, yeah, I'll pass.

I wondered about the dough improvers too, but I couldn't find SAF Gold locally for holiday baking last year so I'm happy to give this stuff a try. I emailed my info for a free sample.

From the manufacturer's description it must be an osmotolerant yeast, like the one discussed here.

Hi Home Baker. I don't see any clear indication that this is an osmotolerant yeast, so it may not be a substitute for SAF Gold. Let us know how things turn out if you try this yeast with a sweet dough.

I couldn't find a specific list of ingredients on the website. Aside from freeze dried yeast, what does this product contain? The website reveals that it has "dough improvers." Would you mind revealing which ones? Thanks.

1)  A hint from the product's web page (curious to know which marketing staffer thinks people are so intimidated by yeast that we need a "premium" yeast?):

.... Red Star® PLATINUM is a premium instant yeast blended with dough improvers commonly used by professional bakers that will make your dough so forgiving that you will never be intimidated by yeast again .... Red Star® PLATINUM is NOT gluten free because the dough improvers are derived from wheat flour ....

2)  More information from another forum, thanks to someone sharing info (I'm guessing from the packaging itself) I can't seem to find on the company's web page:

.... ingredients : yeast , sorbitan monostearate, soya flour, ascorbic acid, enzymes

I "get" most of the ingredients, but a bit more on that second ingredient here:

.... Sorbitan monostearate is used as an emulsifying agent in cake mixes, icings, baked goods, puddings, imitation whipped cream, hemorrhoid creams, and creams to treat dry skin ....

Hmmmm .....

Hi, We appreciate your comment but feel that the "staffer" wasn't trying to insinuate that everyone is intimidated by yeast...just that this product is so much easier to use. No need to proof the yeast before hand in water. Actually, there are plenty of people who are intimidated by yeast baking and we are delighted that most of the people on this forum are not! Why don't you try it and let us know what you think.
