waffle dough?

I recently watched a TV programme which highlighted  great places to eat. One of these places made outstanding waffles. The waffle batter was more of a dough. It was made with yeast and when place on to a waffle iron it looked like a high hydration dough. I have tried to recreate this with out much luck. Anyone else tried this

Pancakes and Waffles, Sour Dough

Sponge:

1 cup (4.3 oz) all-purpose flour

1 cup (5.3 oz.) whole wheat flour (white or red)

2 1/4 cups (19.4 oz) buttermilk

2/3 cup (6 oz.) refreshed sourdough starter (equal weight flour & water)

Sponge: Mix together the flours in a medium sized bowl.  Add the buttermilk and refreshed sourdough starter, mixing well.  Cover and let stand overnight.

Batter:

3 extra large eggs

1/2 cup (4 oz.) melted butter or vegetable oil

3/4 tspn. (0.1 oz.) salt

1 tspn. baking soda

2 Tbs. sugar

1 tspn. vanilla extract, optional

Batter: Beat the eggs, then beat in the melted butter.  Beat in the salt, sugar, and soda.  Blend into the sponge.  Let stand for a few minutes.

Baking: Preheat the waffle iron to medium high.  Spray the preheated waffle iron with vegetable oil.  Pour in as much of the batter as will  cover half of the surface and cook until steam ceases to appear.  Batter may also be spooned on to a hot griddle to make pancakes.  Serve with real butter and warm maple syrup, or whatever other additive you wish.  Makes about 5 waffles.

Two yeast-raised waffles come from Belgium. Liege waffle (also known as sugar waffles) are very sweet, very full of butter, chewy, and crunchy from the inclusion of pearl sugar. Brussels waffles are light and airy because they are made with beaten egg whites; they are also less sweet and tend to be crisp instead of chewy.
