What do you call the "mold" bakeware piece for subway/grinder/hoagie rolls?

Hi Everyone!


I am extremely new to cooking. I have been trying to make some grinder/subway/hoagie rolls and have been trying different recipies. I want to purchase a bakeware product online that is like a "mold" for those rolls. (For example, if you go to the Subway restaurant and watch the person take the rolls out of the oven ... there is this red silicone "mold" piece that all of the rolls are on top of and they flip that flimsy piece over and all the rolls fall out). The piece looks like it is made of silicon, and fits several rolls in there (it's like a U shape thats 1 or 2 feet long). I went to the chef store nearby and I found a baguette "mold" but it doesn't really do the trick.


Moral of the story is I want to buy those molds like Subway uses, but I don't know what they are called and have been searching for an hour to no avail. Any help would be really appreciated!!

I think you're going to find that those molds are specially made for Subway and other sub shops. Short of somehow finagling one from them, the baguette pans are probably the best you're going to do.


Chicago Metallic does make a Sub Roll pan, and it is very similar to the baguette pans, but probably even less similar to the Subway mold(appears flatter).

These are both perforated pans. There are the non perfoated baguette pans though.


I've been looking for a while myself for a sub mold, but will have to do with making "perfectly decent" buns on a sheet pan.

and just to clarify... are these the ones that have 4 to 5 slots that 'subway' would typically lay the frozen bread in to thaw and rise?!

The problem with silicone molds is that silicone rubber is an excellent insulator, and for a bread/cake pan you want a thermal conductor. I bought a fancy rose shaped silicone cake pan once, but the inside of the cake wouldn't even start to set up by the time the top was over done and getting burnt.

hey the molds you are looking for are made by Silpat.


 


i found some actual subway molds on ebay, i am guessing that you probably cant buy the actual ones from a store or anything, but i havent really researched too much.


they are a silicone/glass mixture i believe, and perforated.

I worked for a sub place and the owner there had too previously been a Subway franchisee and brought his old molds along to his new place, I loved the ease of using them but he wouldn't part with any. I just sold my Subway restaurant and I still have a case (12) of brand new Silpat preformed bread pans.  If anyone is interested, I will sell them for $20 each with $4.95 shipping.  If you buy more than one, i can even combine shipping.  I can accept PayPal.  The dimensions are 18"x13", made to be set on a commercial size cooking sheet pan.  There are five channels per sheet which will allow you to bake five rolls of bread.  Thanks, Bob Norcaltuning@gmail.com

Just acquired a bunch of these molds from a Subway shop in NYC that shut down.  Was gonna put them on eBay.  But see their is a bunch of posts about these on this forum so I made an account and this post to see if anyone here would like some.  I have 69 of the 4 cavity and 5 of the 2 cavity (what's that for?).  They are well used, still with crumbs and stuff.  Some have little rips on corner.  Most are just used.  I thought I was getting a bunch of the more traditional flat silpat but guess not, I only got these form style.  I think $16 each.  I'm in NYC area.  Go their from northern suburbs like once a week.  I can meet you near I-84 or NYS thruway.  you can try to reach me directly at "hud" and "valley" and "wine" and it's gmail account.  Combine the quoted words and then attach the gmail dot com and that's how you can reach me directly.  Oh, I'm not gonna ship unless it's purchased off eBay site and even then I'd only ship domestic lower 48 states to actual home or work.  Too many scams ... constant paypal fraud BS.
