B-Sides - From the cutting room kitchen floor - Part 1

Many more photos get taken than appear on my blog. Picking and choosing is an agonizing task. Sometimes a photo just doesn't fit within the context of the prose but more often than not I have just taken so many photographs that tough compromises need to be made. I have decided to collect an assortment of photos and post them so they may see the light of day. Many will be familiar to readers of my past blog entries.

I'll second Charliez's praise.  Some absolutely gorgeous pics, Phil!

And another question: do you more often use manual focus or the camera's autofocus capability?  I am continually impressed by the clarity of your pictures, as well as the attention to composition.

Hi Paul,

I rarely use the manual focus as I struggle with the feeling of the controls. What I do however is use the cameras 'manual selection' for the auto focus. With this I can select where I want the point of focus which is really important if using a shallow depth of field. For the majority of the photos I will have the camera on 'Aperture' priority so I can adjust the depth of field to my liking.

Phil,

Thanks for posting all of these photos.  They tell a story all by themselves.  I love the simplicity and how you are able to use light to enhance and define the 'subjects' in your shots.  As I have said before you have a knack/gift for being able to capture the essence of an object - certainly makes me look more deeply into the common every day things in my own kitchen/home that I rarely give a thought to as I go about my daily routines - but where would I be without them?

Comment on one photo in particular.  The window shot that I assume to be a photo taken in your kitchen.  Was it taken before or after baking?  I am impressed with how clean and uncluttered the area is.....not how my kitchen looks - especially when I am baking!

Hi Janet,

I think from memory the window shot was taken the day after baking. We run a pretty lean kitchen ... very minimal with almost no bench 'clutter' Makes cleaning up easier for me as well. That's the window where I knead ... Can be quite relaxing staring out into space :)

I also say Wow! But I am most impressed by the beautiful breads. What sort of oven/steam arrangement do you use to get such professional looking breads? You are an inspiration, thank you.

I am using a Westinghouse Convection oven. I have a large baking stone plus another near the roof of the oven for added heat retention. For steam I use a cast iron skillet filled with heavy nuts and bolts which I place ice cubes into.
