what is fat ratio of eggs

When adding eggs to a dough, is it 100% fat? or just the yoke?

I treat eggs as part of the liquid and ignore the fat content. My foods and nutrition book lists a 17 gram egg yolk as having 5.4 grams of fat.

many folks use 75% of the weight of the egg as water in the mix.

No messed up DNA there, just a chicken with one hell of a delivery!  The thought of all the stretching would reverse anyone's appetite.                    Wonder what shocked the hen to reverse her production steps?
