Had a lunch with some UK TFLers in London yesterday (just a casual lunch. Not a full-blown one like the Oxford get-together) and one person mentioned about this video.  So, thanks for posting. Immaculate timing!

Haven't heard from him for a while, so I was assuming he was quite busy at a bakery he started working earlier this year. Great to see him still live and kicking (literally....:p)  and  happily baking.  :)

Vincent Tallue - the best baker of my generation. Nice to know we're only months apart in age. At the best of times I have the energy and enthusiasm he has. In another life I would be just like him, working the way he does.

If I ever have my own bakery I would snap him up at any cost!

Totally agree. We're so lucky to have someone like him in London.  Wish all the 'artisan bakers' were as genuinely passionate about good, honest, real bread like him.  It's a good thing the so-called  'Gourmet boom' last 10 yrs has helped improving the standard and varieties of 'artisan' breads considerably, but sadly the overheating of it and rapid increase in demand have also made some of the bakers to start cutting the corners in the production, hence lower standard than before. 

If I ever have my own bakery I would snap him up at any cost!

"Over my dead body!"  Syd would say, though,  I think...... :p  Hopefully you can join us at a next Get-Together sometime in the near future and meet him and Syd in person. ;)

But when I stand back and think, "So he has to do it all over again tomorrow..." I get depressed.

I could never be a production baker.

The repetition would bore me after a week.

Then again, with an endless supply of coffee beans, who knows?

it just brings the longing for working in large quantities and doing "the same" (no - I don't think it's ever really the same) thing over and over.

If you've ever put you hand in a spiral to scrape the sides (and check the dough development) while it is running  (I call it "spiral surfing" or done those folds in a large tub, or shaped loaf after loaf under the pressure of getting out the bake - well, I just miss it.

I think there is always the challenge to do that "same" thing better/faster and that's what fascinates me.  And somedays you get the bear and somedays the bear gets you.  happens even to the best of them.

A young person's game in many ways.  But maybe not in all ways... :>)

Lindy - you make me "bakery sick" - just what I needed to inspire me to actually get to my next educational experience...

When I was a wee lad, I worked as a stock boy in a market. It was the same thing day after day, but I always managed to make it interesting. I'm sure I could so the same with baking.

When I win the lottery, I'll be able to bare the $10/hour pay rate too. :)

"the lottery" - many defintions of winning it.

As I say to myself over and over - we all have a destiny to fullfill.  I've done mine.  Now - on to the fun stuff! ;>)

i enjoy watching this video. it is your energy that is doing it for me. I agree with lumos. we missed you ob friday but shared all about your happy energy and approach to work with bread. cant wait for the next video dont work to hard, but then again you enjoy it so much carry on bye albert

You are misinformed.

Baking is no different than a lot of other occupations or life situations.

You get out what you put in.

If you are content to be a worker bee, that's okay, but if you are willing to accept more responsibility,

you can make some decent "dough"

But, yes, I know what you mean.

I've been both the worker bee and the queen bee, and I'll take the former over the latter any day, but the pay differential always, always means warming the throne.

is a younger person's game.  Not unlike professional movers and others who must rely on a healthy body to make a living.  It's hard, physical work that exacts a toll.  Still, if you can have fun while you are doing it...
