Melonpan

Today I made some japanese Melonpan. I think I should have baked them a little less, next time I will watch out for that. These sweet yummy breads were as light and fluffy as possible. That's the first time bread has felt that way to me. So light as a feather and so tasty!!! Sorry cant type the exact recipe cuz I didn't measure anything and was just grabbing and throwing in stuff on instinct alone. I can share the pictures though.

Yeah I do remember.

for the bread:

flour

powdered milk

sugar

salt

water

unsalted butter

after kneading the dough for 10 mins i folded in the butter. let it rise until double size for about 45mins to 1 hr. divide into 50-60gm balls and let rise for 15 mins

for the cookie dough:

unsalted butter

egg

sugar

pinch of salt

baking powder

vanilla and pineapple flavoring

pastry flour

cream butter, flavoring and sugar, add egg and beat well until creamy and smooth. fold in sifted flour+baking powder+salt. wrap in plastic wrap and refrigerate for 30 mins. divide into 50-60gm balls and roll into 1/2 cm thick rounds.

cover the risen balls of dough with cookie dough tucking the edges of cookie dough under the balls. with the scrapper make slashes on balls and sprinkle sugar or brush honey on top. thats it and you are done!! now to bake them in the oven. i think i baked them on high at 200C for 15 mins. less temperature and longer time makes them too dry.

PS: sorry :( got no measurements cuz i go by instinct. if you have sweet and soft milk bread or rolls dough and rich cookie dough then you can make them. its pretty easy. as for flavoring you can add whatever you like. even lemon peel or chocolate chips and vanila.

one point i noticed is that cookie dough is so rich that its melts at body temperature! i had to hurry-scurry around pretty fast to keep things in shape LOL
