Hi i ve seen a professional mixer which has an extra scraper bar which turning while the dough hook stil operating can anybody enlight me?Tank you all in advance.

This is the dough breaker bar (if it is a spiral dough mixer.) Otherwise dough would simply wrap itself around the spiral and turn around and around. The breaker bar separates and folds the dough.

The Bosch dedicated stainless dough bowl, where the dough hook comes from the bottom of the bowl, has a scraper that circulates with the bowl.
Costas-I've been baking dough kneaded in one Bosch Universal or the other since the 70's. There's one thing that I am able to assure you of: you absolutely don't need the stainless bowl with the scraper in the bottom. This was originally sold as the deluxe bowl in the 70's. It doesn't have the center shaft that the regular Bosch bowls have. In the bottom, the dough hook/scraper set flat in the bottom and the hook curves up, instead of the opposite with the regular dough hook. As others could tell you here, with the Bosch the proper way to knead is to begin with liquids or at least a runny batter in the bowl, then add your flour(s) until the dough balls up and cleans the sides of the bowl. Works every time-at least, 30+ years for me it's never failed. Works just as well with the regular dough hook as with the dough bowl. I've just had that deluxe bowl for a long, long time and it fits the newest of the Bosch Universals. Go to Pleasant Hill Grain and look it up under the Universal Plus. Once again, though, don't expect it to be necessary; if it were me I'd spend the money elsewhere. Like that neat Brod & Taylor proofer that I bought from them recently, and am loving!
