Greetings & Salutations!

Greetings all,

I am a cook (French-trained chef via an apprenticeship) and although I currently work in the banquet department of a hotel in Northeastern Pennsylvania, I shall soon be relocating to Texas to accept a line-cook job in a fine-dining restaurant.  I am not a baker (although I am fairly good at it) but I do enjoy baking at home for myself, my friends, and my family.  I joined this site in hopes of learning more about baking (breads and otherwise) and hopefully improve in an area that I think I need to work on.  I look forward to talking with you all here and learning from you.

Slaínte,

Paul

There are several of us here from Texas.... where will you be working?

I haven't actually gotten the job yet (sheepish look) but I have quite a bit of confidence that I will get it.  The Exec Chef know's that I will be applying, and I have a friend (the chef that trained me) who already works there and is vouching for me, so I am certain that between that, my references, and my experience I should not have any trouble...it is only a Cook 1 position, but it's what I've been looking for.

I will be relocating to San Antonio even if I do not get the job, however.  There are better opportunities there than where I am living now, and the part-time job I have at the moment just isn't able to pay the bills.  There are few enough jobs that I am qualified for here in the Northeastern PA/Southern Tier NY area and there are enough people with more experience than me applying against me that I've not been able to get better than a part-time cook/server position here.  San Antonio holds much better options for me.  I was stationed there (in the Air Force) until a few months ago when my enlistment ended, so I know the area and what it has to offer (as well as what it is like to live there).  Besides, after spending as much time as I have in San Antonio I've really grown to love it (and miss it now that I'm gone).

that the new job will work out for you.  Welcome to Texas when you get here! My brother lives in the San Antonio area and loves it there. Every time we go to see him we end up eating at great restaurants... there are such a great variety of ethnic places... you will have no problem finding your "dream job."  Good luck and great meals ahead for you.

has a very low unemployment rate and no state taxes! My brother moved there from Detroit about a year ago and found a job no sweat.  It is one of the few American job success states at the moment.  Fine chefs should have good luck finding work there.  Welcome!  You came to the right place in TFL to find out about all things bread !  Hope your move goes smoothly.
