Hi gang,

I made soft pretzels today with my first sourdough starter!  I've got the sourdough fever...I added one cup of fed starter in my pretzel recipe. Adding the starter really changed the texture to a softer, lighter interior but kept the chewy, salty deliciousness of the pretzel crust. I ladled boiling water with baking soda  over proofed pretzels and baked them at 425 for about 12 minutes. You will definitely love this recipe. Step #6  Suggests adding 1/2 cup soda to rapidly boiling water.     It is safer to add soda to cold water and bring the solution to a boil.   Adding soda to rapidly boiling water can cause a reaction sending hot foamy soda water over the edge of the pan and onto the stove.

It would be so much more fun with rapidly boiling vinegar. :D
