Breads of Italy

Just got done reading Daniel Leader’s book Local Breads with great interest only to have it squashed by the comments on TFL from fellow bloggers concerning the inaccuracies of the recipes.

Can anyone suggest a good source for breads of Italy &/or would be so kind to share their favorites.

The cookbook world is not a perfect world, kind of like the rest of all things.  I would not discount Leader's book as recipe errors are just part of life.  Corrections for those errors are available at Leader's website.

As for the breads of Italy, The Italian Baker by Carol Field is a highly respected book filled with great recipes.

I've googled Daniel Leader and Local breads and haven't found this list.

But I seem to remember TFL members found a lot more errors than this. Is there a single list for these? I have avoided using this book for the same reason.

Hi Frank,

Leader's book is wonderful in terms of the breads he uncovers.   Use the corrections available and give the formulae a go.

Carol Field's book is a classic; just to second what Jeff already advised.

I have enjoyed "The Handmade Loaf" by Dan Lepard. He has a nice section on Italy and other countries in Europe. Many hearty authentic breads.

I would also recommend ' the Italian baker' by carol field a lot of the breads use a biga which really adds to the flavor :)

Hi,

I've enjoyed the breads in The Il Fornaio Baking Book by Franco Galli.  Also, the dolci and biscotti are excellent.
