Wire Cooling Racks for Brod&Taylor Home Proofer - Measure

It has been brought to my attention by Mr. Michael Taylor.  If you plan on ordering the set of 3 wire cooling racks for your B&T proofer.  Be sure and check the measurements.  The ones sold on Amazon.com by Wilton are to large.  They are 15X12 1/2 and will not fit.

The ones I have must not be Wilton brand.  I've had them for sometime and can't remember where I purchased them or brand.  They fit very nicely inside the proofer and measure.

I have found very similar ones that will fit at ( fantes.com )

They measure 13.5X9.75 and come in a set of 3 for $11.99

Also it works great if have a small single cooling rack and use the paper clips as I posted earlier on my blog for an easy adjusting shelf.  You only need (one shelf) and the one comes with the proofer. 

ADDED:  Also available from Norpro and Fox Run on Amazon.com  Stainless Steel and will fit.

Thanks Sylvia, I might have purchased them without looking closely. So far I have managed quite well by stacking or arranging on a single layer.

Yesterday I had a levain, soaker and my starter on one level and a rye starter I'm building for a Vollkenbrot on a second tier. Still room for more.

It's amazing how much space there is inside the proofer.  I found the right ones on amazon.com by Norpro and Fox Run that will fit with free shipping available..only 10.99 for Fox Runs set of 3.

Michael Taylor is getting his made now and I'm sure they'll soon be available and work better.  The new design will come in very handy.

Hi Sylvia....thanks for all the great information you're sharing on this proofer.  Does the lid on the replacement fit better than on the original unit?  

Are you finding the internal temps to be pretty accurate?

The lid closes and latches great...since I found out I didn't have the wire rack properly placed before closing the lid.  It has a space made in the wire rack so the hinge thingie doesn't interfer with the closing.  I noted someone else remarked on this and probably did the same thing I did and had the rack just a little to far forward..it's a simple thing to do and just needs to be placed into the proofer properly.  Also, I don't store mine in a drawer..I stand it up in my racked cupboards for cookie sheets and such that's above my oven.  

I only tested the exact temperature once with my instant read thermometer and bread prob thermometer and it was right on.  I was very satisfied.  I also read where someone else tested the temperature and it was exact.  There's a light that blinks to let you know when the unit is heating up and has reached the set temperature.  If you should open it and it cools off, it will come back on and warm up to set temperature.  I think the internal temps are very accurate and the moisture tray works great too, providing a wonderful humid enviroment.  My doughs, preferments were never covered and remained moist and true.  I'm very pleased.

I have been using the proofer to maintain multiple dough items at the same time. I might have a bulk ferment going along with a small pre ferment and I'll put my mother starter in to keep it warm for a day of recharging the activity level. I try to give my primary starter (white) a couple days of 76F temperature environment to build the population of the bacterial community and strength of the yeasts. I also like to use the proofer to grow my rye or WW Levain builds for a specific bread.

I have found that I can arrive at a vigorous state with a levain build much more reliably if I keep it at 76-78F. The result is that the dough performs much more reliably, I get better proofing volume increase and oven spring. It all starts with the starter build or "elaboration".

Hi Sylvia

I am reading your post with envy.I live in England and woul love one of these provers. I found the company  online and emailed them to ask how much it will cost to land in England, to date no reply from them. I did that on the day that you first wrote about yours. May I be presumptous and ask how much it cost in the USA . I really like thje product. thank you

Go to brodandtaylor.com  or type in brod and taylor bread proofer in search engine and click on product.  A new lower price holiday special is being displayed.  I don't know about the electric conversion you would probably need.
