English Muffin Bread

I'm making English Muffin Bread from James Beards book 'Beard On Bread'. For many years I've made his recipe 'English Muffin Bread for Microwave Oven' page 157. I have been successful in developing my sourdough starter so instead of discarding half of it I tossed it into the dough for the English muffins. Proofing now. Results later this evening. Wish me luck.

Hi I use this recipe with excellant results & it is the easiest bread I make.  The inside really looks like English muffins with tons of nooks & crannies- if your recipe doesn't work for you.

Thanks for the reply. Your recipe is very much alike mine except for conventional oven baking. I'm going to try it. I wondered about the requirement to eat the bread within 30 minutes of baking it. I think I would use regular loaf pans so that I will get a slice that will fit in my toaster. But first, I'll make it just as you describe.

hi- I use regular loaf pans & they work great- the shorted ones 8.5 or 8.25 give a higher top.  take care

I make the same bread but bake it in some tin coffee cans I have had for many years.  I make a round of parchment paper for the botton to make sure they don't stick.  They can then be sliced in rounds, just like the muffin.
