Your Challahs (and the pictures of them) are works of art.   I love the first one and can't quite wrap my head around how you might have done it.    But you have done that to me before, with your intricate braiding.   -Varda

The round-up braiding is not difficult(!) at all. 
If I manage to illustrate it (I'm terrible at that), I'll upload the illustration so you can see.

I don't know what to tell you regarding a recipe for beginners, because usually my recipes are a bit complicated.

I'd go for a recipe with just one kind of flour, and not with lots of egg-yolks, or even with no eggs at all. it will be easier.

But I honestly think that if you are here, that means that you are not a beginner :) 

BTW my family's favorite is mixed-flours challah

(Sorry for not answering sooner, yesterday was a holiday here)
