I don't know what to tell you regarding a recipe for beginners, because usually my recipes are a bit complicated.
I'd go for a recipe with just one kind of flour, and not with lots of egg-yolks, or even with no eggs at all. it will be easier.
But I honestly think that if you are here, that means that you are not a beginner :)
BTW my family's favorite is mixed-flours challah
