Sourdough Pancake with Honey Lemon Poached Pears

I’ve been wanted to try making sourdough pancake for quite sometimes. It was regularly suggested by sourdough bakers as a good way to use the starter discard from the feedings. 

I make pancake rather often. And I was curious to find out how well sourdough starter would leaven the pancake batter and the taste it would give.

I used the recipe from King Arthur website. The recipe is for sourdough waffle and also good for pancake. I usually have pancake with berries. Now, it's almost Winter in Australia, berries are hard to come by and/or too expensive. Topping alternative I had in mind was poached pears as pears are now in its peak season. 

I adjusted the pancake recipe a little by adding a little bit of malt powder and grated lemon zest. The pancake recipe produces relatively thin pancake. It was a scrumptious breakfast. Sourdough pancake tasted excellent with mild tang to it. It added depth of flavour. Poached pear was fabulous. I love the honey and lemon combination poaching liquid. It went really well with the pear. I also reduced the poaching liquid to use as pancake syrup.

You pancakes look wonderful and make me want to try some with the Pears and syrup reduction.  I haven't used the KA recipe byt have one from a newspaper insert called Relish that was the best sourdough pancakes I ever ate.  Now the recipe isn't any different from any other really so I guess I was just super hungry for pancakes and that made then wonderful but I post the recipe in case you ever want to try another recipe.

 

Their starter recipe called for yeast but the starter I used was my own sourdough starter saved from a refresh the night before and it contained only my own natural yeasties.

Thanks for sharing the recipe. Relish's recipe is quite similar to KA's. KA's version gives an option of using either butter or oil. I chose butter, I just love the buttery goodness:)

I've never made poached pear with honey and lemon before and totally love it now (the usual go-to poaching liquid is sugar spiced syrup).

A creative way to use your extra starter, Sue!  I think the honey poached lemon pear topping is inspired.  Great idea. :)

The honey lemon poached pear was lovely, honey & lemon worked so well together. Now, pears is in full season here. I'm thinking to do more of them for portridges, muffins, danishes....

Hello Sue,
The pears and pancakes look fantastic and so delicious.
I've pan-sauteed Golden Delicious apple slices with butter, honey and lemon and really enjoyed this as a pancake topping, but the poached pears are such a nice idea!
Peaches with lemon-verbena syrup are a favorite too...can't wait for summer, and fresh peaches...

I love the idea of sautee apples too. It's sound delicious and simple, my favorite way of cooking, simple and delish.

You've also got me thinking of lemon-floral combination syrup as well, I can almost feel the aroma of sweet floral peaches, must be wonderful. Thanks for the idea.

...did you add just a touch more cream after you'd taken the pic? C'mon, you can tell us!

I make SD pancakes every week, firstly because I'm bad to the bone and so is my partner, and secondly because as you say, it's a good way to use up leftover starter (or starter that's being fed up after a period of hibernation in the fridge). I haven't tried the recipe you used, but here's a tip you might or might not know that enhances the lightness of SD pancakes: separate the egg yolk from the white and mix into the batter, whisk the hell out of the white until it's an airy creamy consistency, then gently fold it into the batter just before you make your pancakes. Of course, this is an oft-used technique in cake and other baking, but not so often applied to pancakes. Makes a real difference, I find.

Not that your pancakes need anything extra, going by the look of 'em.

Nope, I swear I didn't put more cream on the pancake;) Well, it's because that was the last bit of cream cheese we've got. I got a big bowl of ricotta cheese meant for the pancake but I didn't know that it was beyond use-by date. So, cream cheese was sort of last resort.

And thanks for the tip on pancake. My only issue is I can be a bit slack at time, especially for pancake in the morning. Seperating and whipping egg white sounds less appealing in the morning. I also add ricotta cheese into the pancake batch sometimes, when I have it at hand and want a fluffy pancake.

Wow that looks tasty. 

Today I baked sourdough pancakes with some cinnamon and kardemom added. 
It is a secret mix sold for apple pie at a local store. 

Anyway it tasted good with some honey on top.
