JHamelman's Light Rye and Pain Rustique, Thanks to Franko!

Today I baked 4 loaves, 2 light rye and 2 pain rustique from JH 'Bread'.  After seeing Franko's lovely bake of the Pain Rustique, it sounded and looked so good, what a perfect bread to have on hand. The flavor is delicious and the crust sang.  I left the caraway out of the light rye.  The bread is very good, but I prefer more of a rye flavor. We were up late last night and so it was about 2am I put together my poolish and sourdough..tired as I was today, I baked the breads and made a rotisserie chicken for dinner.  I hope to make a better looking crumb on the next go round.  I bought a new little Bosch compact and usually do all my mixing by hand, but wanted to try the mixer. I love this little compact mixer, but I still prefer to do my mixing by hand...anyway, it was fun getting a little practice using it.

                                  No recipe on these buns.  They were a one of those experimental batches.  Basically a sourdough whole wheat bun recipe that I

                                 messed with adding some APflour, egg and powered milk.  They were very tasty.

I always seem to have to many irons in the fire at once, so to speak..but the one loaf turned a pretty ear with the towel steaming!

Lovely range of breads Sylvia.

I prefer to mix by hand at home too.   But using the mixer will probably help give you a stronger dough to make those lovely buns you showcase

And I so agree with you about hand kneading. I bought a big mixer when I broke my finger a couple of years ago, but now I hardly ever use it except for large batch baking. If you can't get your hands in the dough, it's just not the same!

My only question about the loaves is: are they woodfired?

Thank you, sortachef.  These loaves were oven baked.  Family has been keeping me pretty busy, in a very pleasant way lately, and I haven't had much time for baking and hope to fire up my oven this week...that is if it doesn't rain again and I have some 'baking time'...but there are more plans ahead.  My wfo has been drying out from the rains.  Rain ran inside the oven and I let it dry up for the second time...I now have a cover that goes over the entire oven, is easily removed and replaced and keeps everything nice and dry.  Looks like rain again today..I hope to make some pizza this week.

Wow! I'm happy and honored that I'm even slightly connected to one of these excellent looking loaves. Thanks very much for  the mention and linking to my blog.

Everything looks just super, from the shaping and crust, to the crumb, of all the loaves and buns you've baked here, but that shiny translucent crumb on the PR is a real show stopper. I don't know about you but I much prefer the PR to any Ciabatta I've had just on the flavour alone. Nice baking Sylvia!

I'm looking forward to making this very tasty bread again, it's a pleasure to make, especially as I don't always have my sourdough ready and my baking times planned, this bread has a lot of good convenience qualities too!  I had 2 large loaves.  My two grandson's 14 and 17 are coming over to spend the night, they will enjoy this bread and then we are off tomorrow for a day at their home.  They just called to see what I baked!  They tease me a lot about my bread baking :)

Wow! You certainly had a busy day. The shaping and scoring are wonderful and I'm with Franko on the pain rustique - just a beautiful translucent crumb.

Your bread is beautiful.  I am interested to learn of your 'towel steaming' technique.  I use a cast iron oven in the oven to provide a small heated atmosphere where the water from the bread provides the steam.  Interested to learn others.

The cast iron dutch oven is a great steaming device, I also use it too!  But unfortunately I can only do one loaf at a time. 

The towel steaming method has been around for some time...this is the way I like to use them..microwaving them soaking wet 'rolled' super heats up the center and retains the heat.  Use caution as with any steaming devices.  Use plenty of water on your towels and add some in the pans.  I now add the towels from their microwaved bowl right into the bread loaf pans that are placed under my hot water dispenser 'kurug coffee machine' push the button for hot water, to go over the hot towels and place it all into the oven for pre-steaming..while I prepare my loaves for transferring into the oven.  This works great for me, because my microwave oven sits above my coffee counter, that sits right next to my double wall ovens.

The laoves opened up really nicely. Your steaming techniques does the wonder.

It must have been busy and enjoyable day for you making three different types of breads.

I have mixer but still love to mix by hand, or at least finish it off by hand. I need to knead to feel the dough and I feel that I learn better this way:)
