In your opinion - (asides from wild yeast cultivation) is there a lot of difference in dried quick yeast (packet) and blocks of fresh yeast (crumble)?
where do you get fresh yeast? i was thinking about going to a local bakery to see if they had some they could sell me.
For me there is a difference - I used the packet yeast quite happily for a few years but I made some soft white baps where I made a batter before the bulk fermentation. I found there was a horrible aftertaste if it's used for anything other than the most straightforward of recipes.
I mostly use my levain now but I've usually got some fresh yeast in the freezer which I get from Richard Bertinet either direct or via Amazon. I'm in the UK, so I'm not sure if that would be an option where you are, but I bet something similar is available on other Amazon sites.
I found some 'fresh' yeast on amazon (crown was it?) but find the name 'fresh yeast' rather confusing - how fresh is fresh i wonder?
The yeast I get is in very good condition and comes packed to keep it cool during transit.
I'm sure the stuff you've found would be good too. Give it a go!

I think that it ios from the same manufacturer as the yeast that Richard Bertinet supplies.
