Roasted Garlic Sourdough

After I had fried up some onions for dinner the bottom of the pan looked and smelled so good with the carmelized onions.  So I put a little water in it, mashed up some roasted garlic, and used it in my autolyse for this bread.  It smelled heavenly in the oven.

That looks gorgeous.  I love the crumb. What flour did you use. I bet it makes a good sandwich,

Thanks for your comment, Syd.  :)  I am using a locally (Northern Thailand) ground (but berries more than likely imported) bread flour at 13% protein and Waitrose organic whole wheat imported from Australia.  It was delicious, but I think I will use more roasted garlic next time.  I did my S&Fs with quite a bit of olive oil.  I don't know if that's cheating but it worked good for me.  ;)
