Lepard's Cornmeal English Muffins

These are absolutely delicious, and very easy to make.

Love your blog photos and mention of reducing amount of water ... I have one question on ingredients

1 sachet fast-action yeast

I assume this is "instant" yeast - what is the weight in grams?

Thanks for sharing this recipe - that ham and egg shot should be against the law ... makes me want to go bake some RIGHT NOW...

hello there...

 

I used regular, active dry yeast, and measured it with a special spoon from King Arthur that has the exact amount of the "sachet" sold in stores.  It corresponds to 2 + 1/4 tsp

 

I did not bother searching for 'fast acting" yeast, the dough seemed to rise at a good pace, and the muffins turned out nice, so I don't think it matters that much.

I will admit my ignorance - not used to the term "sachet" ... in the US we call the same thing a "packet" ...  I look forward to trying this soon ... thanks again for sharing this formula.
