I think I'm in LOVE ...cinnamon raisin walnut bread

This is Cinnamon Raisin Walnut Bread with cinnamon sugar swirl from the Bread Bakers Apprentice. I also brushed the hot loafs with melted butter and sprinkled on more cinnamon suger per side tip in book. It is so good! I am pretty happy with my efforts.

Your swirl looks wonderful. What did you use for the cinnamon swirl?That is one of the few books I don't have!

Also, please comment on how you shaped it-my cinnamon swirl is always loose and falls apart when I slice it. I've done lots of variations- dry sugar cinnamon,wet,buttered,pressed into the dough cinnamon sugar,tight rolling,thick and thin rolls. I just can't seem to get the hang of this one.

I just dumped about a 3/4 cups sugar and a bunch of cinnamon in a bowl and sprinked it on. I rolled it as tight as I could pinched the ends and kinda folded them under and then rolled back and forth lightly until the seem was almost gone and plopped them into a loaf pan. I let them sit in my oven with the proofer on for about an hour. My cinnamon rolls are always loose.

I love the use of the golden raisins, they are my favorite raisin, nice swirl, just makes the cinnamon even better and then the walnuts...eye catching, comforting and delicious all rolled up together...well done!

I found a bag of jumbo mixed raisins by sunkist golden,regular(lol), and red. Thank you for the nice comments.

The swirls are very uniform. Good Job.

I make this bread 4 loaves at a time so we always have some in the freezer. Suggest you try other variations, as there are many ways to make this loaf. I have used dried apricots, prunes, figs, cranberries and sour cherries, or combinations. Apricots and raisins are particularly good. It is also excellent with pecans instead of wlanuts.

I've tried this bread with pecans and walnuts mixed, and it's great.  But the idea of figs in place of the raisins is inspired!  I have to try that.  Thanks.

Oh my that is one gorgeous loaf. I agree this is a fantastic bread. I think almost every cinnamon recipe in BBA is fantastic. Peter Reinhart shines when it comes to cinnamon.

This is one of my favorites too; just baked one with pecans and golden raisins last week after not having made it in ages.
