Nick Malgieri calls these "Tiger Rolls". I think they look more like Giraffe Rolls.

This is also the technique used in "Dutch Crunch" bread, I believe.
I used brown rice flour for the Dutch crumb. I've also used semolina and white rice flour. Never tried barley, molted or otherwise.
