With a house full of company, my little grandaughter helped me make this apple and pumpkin pie.  We used Caroline's buttermilk crust recipe..ran a little short on dough..so didn't get a fancy crimped edge..no matter, won't affect the taste... we also made a couple of pumpkin pies too..no problem just pieced in the edges.  Making a deep dish apple next time I will triple the recipe..also 3X for 2 large pumpkin pies.  I like plenty of dough to work with and can always make cinnamon twists with extra dough...we like our crust a little on the thickish side...especially when it's this buttery tasty and DIL requested a thicker crust, made me smile! 

Grand daughter picked the Indian girl pie bird for Thanksgiving, she liked her better than the Indian boy!  I have a lot of pie birds!

Caroline, coming to your house for the ice cream, all we had was whip cream! Thank you, MAB8...it was a big hit for dessert.

Thank you, Mebake...Sorry no innard photo.  I bake my pies the day before Thanksgiving, along with fresh cranberry relish, so they were on hold.  I have been one busy grandma, mom, wife, cook, homemaker for Thanksgiving and didn't get photos of the feast, but the innards of the apple pie were gorgeous with the apples 'golden delicious' were perfectly tender set inside a juicy and clear lovely gel of juices from the apple ...I slice my apples and add a little sugar, and lemon juice and let them drain for nearly an hour, this keeps the pie from having a runny watery juice, I use tapioca flour, mixed with just enough sugar to enhance the natural sweetness of the apples, just enought tapioca flour  to set the apples natural juices in a clear, shiny, tasty, just right gel.  I dapple the apples with bits of butter, no cinnamon, no cloves no spices, just apples, dappled with a little butter and not overly sweetned, all set inside of Carolines lovely, tender, flakey, buttermilk/butter crust.  The pumpkin pies were delicious too : )
