This is a dense moist carrot cake, with a lemon curd filling, cream cheese icing and a coating of toasted coconut.
but I do like rasins in mine, and can't see why I can't have both lemon and raisins!! Happy Birthday as well! And I bake all my own cakes, that way I get one I want! LOL

I think the lemon curd would last about a week in the fridge. I think you probably could freeze the lemon curd, but it may be a bit thinner when you thaw it.

Great idea! I don't like overly sweet cakes (or raisins in them, for that matter) and love citrus flavor. I'll definitely try this recipe.
