Banana Bread Not Baking Evenly

Hello Everybody,


I cannot for the life of me get my banana bread to bake evenly.  I have tried different loaf pans.  I think I have not gone throug 4 or 5 of them now.  Each as the same result.  It seems that the bread is always darker around the bottom half then on the top.  For some reason, I can't get it to cook evenly throughout the entire loaf.  I'm cooking it at 350 degrees, for over an hour.  The oven seems to be at the right temperature.  So not sure what else do to?  Anybody have any suggestions?

You don't say where you're oven rack is.  Have you tried moving the rack up in your oven?

The rack is in the middle.  It's an convection oven, but I don't use that feature.  The only reason is this.  We are in the process of moving and our new house does not have convection.  I didn't want to get use to it =)


I did have the same issue in my old house.  It wouldn't bake evenly either.

I would be tempted to use the convection feature (or move the rack up a notch) at least once to confirm that it's the oven and not some other factor.

I'll try moving it up a rack to see what happens.  I tired the convection once before, but that didn't do much better. 


Maybe it's just me and I'm not ment for it =)  Or all the stoves are secretly against me =)

I can't think of anything else that would make the bottom so much darker

When the bottom is too dark, it might be that you're overbaking the loaf. Try placing your pan on a baking sheet to stop excess bottom heat, and test the loaf after 45 minutes. Remove from oven as soon as it's done.
