I want that kind of spray bottle, I've never seen something like this :). Seems to be very convenient.
Anyway, I really like the kneading method. I use it every time when I am working with high hydration dough and it works really well and is a lot of fun, too. You just need to make shure that the work surface is free of any other objects because it might get a little messy.
