Mill Grain Bread

Seeing all the latest posts on seeded levain breads and there looking very tasty with fall approaching I thought I would give this fairly new recipe an attempt,  from http://www.northwestsourdough.com  it is posted on Teresa's blog and called 'Northwest Mill Grain @100'.  

This is my version using KAFlours handy and lovely fresh all natural highfiber blend of, whole oat berries, millet, rye flakes, wheat flakes, flax, poppy seeds, sesame seeds and sunflower seeds, I also added more whole wheat flour and upped the hyration slightly.  I halfed the recipe and made one loaf. Perfect for fall, a hearty, delicious loaf,  with a nice crust and just the right amount of chew.

Hi Sylvia,

Cannot get to see the recipe proper, but your loaf reminds me so much of the Hamelman formula I baked earlier this year, also posted by David Snyder and mebake [Khalid] of late [probably others besides; apologies if I missed you out]

I'm just longing to get to work on "soakers" again; I think this will be a real turn-on for my baking students this year!

Mike put peanut butter on his, oh well!  It's his breakfast before cycling...my mom never kept peanut butter in the house, so I'm not a big fan....quite delicious plain!

Andy, Eric and David for the very nice compliments! :)  It's the first time I've eaten or made a multi - seeded loaf..except for a La Brea loaf I purchased from a local store..didn't care for it...nothing beats fresh from the oven...I have a large bag of seeds now in the freezer..so plenty to practice.

Always good to see you on TFL!  I'm getting in all the baking I can before they mess my kitchen up anymore..the ceiling has a hole cut in it to find a leak from the shower above..well at least they've found out it's the shower, I'm on my third plumber....bummer, especially, when I can't bake.

I know it isn't much consolation, but I had a similar problem in my previous house so I know how frustrating that can be, especially when it's over your kitchen.  Mine was caused by a plastic liner they placed under the shower, when the shower was originally installed, that had developed a crack or split and was allowing water to seep out onto the area surrounding the shower.  They ended up removing and replacing the entire shower. 

Here's hoping they find and fix your problem quickly.  Hang in there!

I think that may be whats going to happen.  I think this was a builder issue.

Beautiful bread, and it looks like it might be good for you.  Do you get the seeds in a mix, or do you have to put the mix together yourself?

Mike loves it...it's like a granola bar only better with PB. 

I thought I would give it a try...so I ordered King Arthur Flours 2 lb. bag of 'Harvest Grains Mix'...I think it has enough for at least 9 loaves.  It is so fresh, ready and no additives.  I was very pleased.

Yummy, Sylvia! That is one fine looking grain loaf. You did a nice job. Keep at it, you'll love multigrain breads, as i did.

Nice job. i'll bet it is great with PB, and I am not a cylicst.

I often think about a leak from my shower, it would mean a hole in my living room ceiling. I torture myself at night about that prospect, when I should be sleeping. Hope it all goes away soon, with a good outcome.

We are really enjoying this loaf with all those lovely grains, it's quite a treat. 

Oh, I know what you mean about no sleep.  Please allow me to vent a little...and maybe give you a little less stress.  Well, we finally got an honest man...little did I know my excellent handyman, came to the rescue..he fixed the leak, installed/fixed the leaky parts on that valve thing behind the big round hot and cold knob...simply removed this knob..didn't have to rip out the tiles...also checked the drain under my 'plastic or whatever material, pan' it looked pretty suspecious..so applied some plummers putty around the space's showing between the pipe..simply removed the little metal drain cover to do this...then he's going to redo..the big hole the other..no show, no call plummer from 'on time plummers' left and charged me $100 to do and oh, since he was here I had him put in a new Kitchen sink faucet..comparable to one I had..I asked for..single one knob with extenable handle PriceF...he said he would get me a better one, Moen..at his cost..he charged me $400 for a 30 min. install job...2 for the faucet 'his cost' 2 for in stallation..I looked up the faucet...at homedepot sells for $100.  The plummer before him charged $265 to tell me water was coming from the door leaking, poked a smaller firstime hole in the ceiling about the size of quarter...which I had repaired, before the bigger hole was made...Oh, yeah, a company recommended by the second rip off plummer wanted $600 to repair the hole he made..My handman..went to two different stores yesterday, a lot of travel on his time, for the parts and charged 118 total including parts/labor and brought the receipt back..he's going to charge a lot less for the ceiling repair..he charges $40 an hour, no charge for coming..and is very fast..he has also removed a whole swam of bees, that were exterminated, that settled in my attic and it's perfect work.  He's a plummer and has built homes..was I lucky to find him, above all he's honest, on time and does great work.  I found him through a free referal service on the internet and they have references.  There's a lot of honest people out there that are looking for work.

Sylvia - That's a beautiful loaf, and as our temps may dip into the high 40's tonight I thought, yes, that is a perfect loaf for a Fall day!  You may have inspired me to do a celebratory bake as the equinox is about to be on us.

Haven't seen you about for a bit!  Wonderful bread for fall or anytime of year really,  you will love it....wow you are in for cold weather.  It is our Santa Ana weather time of year...warm and fire season...without the fires it can be lovely in Oct, Nov, Dec.
