Hello!

Nice to meet you everyone! Thank you very much for this wonderful site! I found it while looking for information about how to make a delicious naan. The advice posted from everyone here helps a lot! Also, this site came up as a place for Shoku-pan too and has led me to a wonderful recipe I would like to try tomorrow. I love Shoku-pan and it is one of the few things I miss from Japan that I cannot get here. It has everything I'm looking for.

I'm not much of a bread baker (in fact I've only made naan and steamed bao...) but this site has definitely inspired me to try different recipes. :) I will slowly start going down them with my sleeves rolled up.

You have found a place where smudges of flour are a badge of honor.  

You have neighbors!  I live in Overland Park (or will again when I finish my assignment in South Africa).  Another frequent poster here, PostalGrunt, lives in Lawrence, too.

Keep us posted on your baking adventures.  You will find a lot of encouragement (or commiseration, if needed) from the other folks here.

Actually, Paul and Angela, I live up LV County Rd 5 and US 24-40 in Leavenworth. OTOH, I do find myself in Lawrence at least three or four times a month. Someone has to monitor the product at Free State Brewery. They're quite the fans of yeast there. IIRC, Verminius Rex resides somewhere near Lawrence.

Don't forget to stop by Wheatfields every now and then for a little bit of inspiration.

You're in South Africa right now, Paul? Are you stationed there for something? 

PostalGrunt, I will definitely visit Wheatfields. I LOVE free state brewery. It's fun to go there.

Yes, Nami01, I am presently in South Africa.  My employer, a large engineering company headquartered in KC, has a contract with ESKOM, the South African national power utility, to assist them with a major power plant that they are constructing.  It's a wonderful, confusing, beautiful, maddening and glorious country.  I'm happy for the opportunity to live here for a couple of years.

the way replies are made on this thread. I meant to reply to the above with my original reply but it didn't go under the "topic tree". I think I've figured it out now! 

It's exciting to see so many bread makers from all around the world on this forum. I am amazed at everyones experiments, expertise, and insight. There is so much information it is almost overwhelming! Its great! I like spending time just reading other people's posts.

My friends are surprised when I go to extra lengths and try different recipes for things like steamed buns (which I tried 6-7 recipes before finding a satisfactory result) or naan. They ask me why I don't just buy some instant mix or buy naan at the store. I'm glad to see people spending the time to bake difficult things even though sometimes it can take hours (or days). I hope I can learn from you all!

Lately, I've been on a Japanese sandwich bread obsession (to the point where I made a little proof box with a light bulb and a wireless thermometer per advice from various threads) and they think I'm crazy. I wish I could let them taste the Japanese sandwich bread that a little bakery makes in Japan near my Grandmother's house...If they could experience that soft chewy texture and that delicious taste...I want to reproduce it so bad! Or at least come half as close to it! That would still be delicious!

South Africa sounds amazing! I've never really traveled overseas much...Only to Japan (and I think Taiwan when I was 3ish...). Is it hot there? I imagine Africa as a land of sunshine and heat waves, but South Africa is pretty...well...far south. Do you bake there as well? It is so cool that you are doing such international work, and for so long!
