9/10/10 - Loaf for my friend Frankie...

Hey All,

Just wanted to share with you a loaf that I made for my friend Frankie.  Hopefully he will send me some nice crumbshots next week that I can post...  Enjoy!

Hi Tim,

Temps must be cooling down a bit in the Big Apple - cool looking loaf.  Is that bran on the crust?  Oats?

Yep, it's cooling down alright...  It's wheat bran...  I'll write out the recipe if anyone wants it...  It's inspired by Dan Leader's Genzano bread...

That is an amazing looking loaf. Great color and I like the texture the bran gives it.

It looks like it started out as a very wet dough. I bet it has a nice open crumb. Does the bran find its way into the loaf as well. Could make for some very nice texture.

Makes me want to tear a chunk off and eat it. You have a lucky friend!

Thanks!  Frankie is very lucky...  Anyway, the bran is used in lieu of flour to prevent the dough from sticking to the banneton...  It actually only stays on the outside...

My friend Frankie send me the pics of the crumb...  I'm glad it all turned out like this...  The thing about bread is you never know how it will be until you cut into the loaf...  Enjoy!
