PAIN RUSTIQUEPAIN RUSTIQUE: PAIN RUSTIQUE: Today I made Hamelman's Pain Rustique and I'm very happy with it. It is creamy and delicious. Thanks TTonka and Susan. I made 3 loaves, one for my neighbor, one in a bread tin for my grandaughter (brushed with butter) and one for us. I will make this again for sure. I'm also going to finally buy Hamelman's book so I don't have to struggle to read the recipe from a pdf. By the way Susan my icons to enlarge the page go off when I go into the file. Who knows why.

You're right about that. I wasn't sure about this one for some reason but when I pulled it out of the oven I thought "Oh Yeah, this is good". Thanks for your photos, it got me to try this and I love it. I've been making a lot of NYT No-Knead and I like the bread but it's just as easy to mix this kind of bread up the night before and finish it the next day. Actually, I guess I love it all! Really nice loaves! You've inspired me; I've been in a NYT NK rut, I'm going to try that one next. I've been reading the Hamelman's (b-day present), but haven't yet made anything. Time to jump in...

Having just pulled out two of the flattest loaves I've ever baked - I'm in awe of this beautiful bread. Mine tastes good and the crumb is nice - but flat as a pancake and not even close to this. Is this recipe a formula or by weight?

This bread recipe is by weights. It's a simple preferment the night before, add the rest of the ingredients in the morning. The dough was very nice to work with and felt very springy all the way thru. I used KA Organic All Purpose Flour not bread flour as Hamelman lists in the recipe. Also, he writes about some kind of frames to put the cut dough into. I ignored that whole thing. I just cut in three, one smaller than the others (that I put in a 8.5 x 4.5 bread pan that was buttered on the bottom and part way up the sides.) and the other two I gently made into rectangles without deflating as much as possible and the two just sat covered on floured parchment paper on a cookie sheet till they went into the oven.

Trish, I've made this recipe many times and mine were flat as a pancake today too. I think this bread doesn't care for cold weather.

Your bread is lovely.  Glad I could help, even just a little bit.  Sounds like you need an Adobe expert, and that's not me!

Yes, you are the expert! I was thinking it was my computer that was not letting me enlarge the pdf in Adobe but your post made me think (wow, think should be easy) that I needed to get the latest Adobe which is what I did this morning and now it works fine. Good grief! I ought to think more often. Thanks.weavershouse

I thought about that as I lay in bed last night--I should have suggested that you get the newest version of Adobe.  Your bread is just beautiful.  I'm over/up in Prescott, AZ right now; probably won't get any baking in this week as I forgot (how could it be!) to bring some starter.  Oh, well, I will be all primed to bake when I get back to San Diego.  Hmmm, maybe I will begin a starter here and it will be local to Prescott.  There I go, thinking again.

Outrageous bread Weavershouse!

What a nice looking loaf. Is there anything in it past the main 4? This must have popped the top off, looks wonderful!

The cutting board looks interesting also. What's the deal with that?

I love Outrageous!  It had nothing but the main 4. 
As far as the bread board, it's something I bought years ago when we bought all our antiques...they were less than the cost of new things back then. Oh brother, now I've given away age. We still buy and sell antiques but it's not the same. Most of the really old stuff is bought up. Still fun though. The cloth the bread is sitting on is one of my handwoven napkins. I like to weave fabric that goes with these dusty old antiques.                                                         weavershouse
