retirement pasta...

My husband is a master at pasta making. He retired on May 14th 2010 and we have been indulging pretty often since then. I made the sauce and the bread...my starters survived my 3 months away on my bicycle ride across the US. He made the lovely pasta you see below. It is 1/2 semolina and 1/2 reg old AP. It is delicious...

The entire meal looks delicious and nutritious--simple fare.  Thanks for sharing it.  Now then, do I see a bottle of Chianti lurking somewhere?  {:-)

That looks absolutely delicious!  I made wfo pizza tonight for our MD dinner. Your pasta would have made a great addition.  I wish my husband could cook.

bernie : it was very good. He has gotten it down to a science LOL...that is what he retired from...chemist. And there was some Pinot Noir involved. 

Sylvia I I LOVE pizza...wish we lived closer. Give him some lessons for Father's Day as a gift. It sure is nice to have another pair of hands in the kitchen. 

Wally you got that right. He loves to make bread too so I will have to watch our weight I am thinkin ! c

For enough fresh basil to pull out my brand new pasta maker. Wanting to make basil pesto for the topping. Basil has been slow to get going this year.

Do you have a squash pasta recipe to share? I'm growing some delicata and butternut squash this year. Hubby is not a big squash fan but I'm thinking about using it in pasta and bread so he'll learn to love the taste.

Love your pasta. What kind of maker does he use? I just got the kitchen aid attachement. Haven't used it yet.

That's where I put my squash.  Slice thin and layered in lasagna with homemade tomato sauce, eggplant, or zuchini and cottage cheese-white sauce w/herbs.   Yum!

Is a classic. Often served with a butter and toasted hazelnut sauce. Yum!

I am so sorry. We have been in a mess here so just getting back to the forum. We have an OLD Ampia pasta maker that was a wedding gift 39 years ago ! We have used it religiously and have no complaints. My son has our old Atlas and he loves it too. So I am thinking it is more the pasta recipe than the machine. We use the food processor to mix it and then rest one hour and then knead in the pasta maker and then cut. No drying . We toss with more of the semolina and it never sticks together. 

 

We never do flavored pasta....have looked at recipes but have never tried. So let me know. David that sounds very yum. Will have to look it up. c
