Shelf Life of Ingredients / KA surprise

 Hello everyone, I'll be back home very soon and can't wait to get back into the kitchen.  My flours, sugars, etc  have been unused for 3 months.  In fact the KA flours (including whole wheat) were purchased just before leaving.  They are either in an airtight container or ziploc.  I saw the thread about WW and questioning it's quality.  Is three months too long?

 I can't wait to get my order in from King Arthur - Lot's of great things I've been wanting to buy should already be waiting for me at the post office.  Like Christmas a morning gift from me to me:  Thermapen, artisan and baguette loaf paper bags (can't wait to hand out bread in those!), SAF yeast (anybody have experience with this brand?), cut parchment for half-sheet pans (no more curled edges), a sourdough starter so I don't have to wait to build one (Although a very nice woman in San Diego has offered to share hers with me - how friendly is that!), starter crock, a professional couche - can't wait.

Susan, great info.  But my flour has been at room temp.. The chart is for fridge.  I have so much grocery shopping to do, I'll just look for KAs flours too.

All white flours: Airtight container in a cool, dark place--not the freezer or refrigerator: 1 year
     

Hehe--You missed the NOT, SDBaker!

Yes, whole grains do need refrigeration for longer storage.
