Yoghurt Banana Bread

Yoghurt Banana Bread

Somewhere between banana bread and banana cake. Dead easy and tastes wonderful - I tend to make two or three loaves in one go and throw them into the freezer.

2 tbsp butter or margarine

1/2 cup castor sugar

1 egg

2-3 bananas

1 3/4 cup SR flour (white, wholemeal or a mix depending upon your preference)

1 tsp mixed spice

3 tbsp natural yoghurt

1/3 cup berries/chopped nuts/whatever else takes your fancy

Combine butter & sugar in food processor; add egg and banana and mix until smooth.

Add half the flour, the spices and half the yoghurt. Mix well, then add remaining yoghurt and flour.

Spoon into a lined loaf tin and bake at 180°C for 45-50 mins. **The original recipe called for it to be cooled on a wire rack, but I find it comes out far better if you cover the tin in foil and cool it in the tin.

What, exactly, is "SR flour" and "mixed spice"? :)

SR = self rising

Mixed spice usually means a mixture of spices appropriate for the type of recipe.  For fruit based breads, cinnamon, nutmeg, cloves, etc.

I have a recipe similar to this one but I use two eggs, 2 Tbsp brown sugar, 4 Tbsp castor sugar and sour cream in place of the yogurt.

SR is Self-Raising flour

Mixed spice is a sweet spice blend , typically cinnamon, nutmeg & cloves as flournwater said, and the one I like also contains ginger and coriander.
