according to wikipedia dextrans may cause rare but very serious health concerns. Is it true?

But they are already in lots of different foods, so clearly some people are not worried about it.

Wikipedia is listing  reactions to intravenously administered dextrans.

None of these happen with oral intake.

I'm still new to the sourdough arena, but doesn't the acid portion of the sourdough starter produce the sour?

Why can't they just use natural bacteria?  ...so someone can patent it and make money off of it...  instead of using a bacteria we've been using for thousands of years!

... it is the nonsense about how there's no time in this modern age to wait for those slow-poke bacteria and yeasts.
